||| OPEN FOR PANCAKE RECIPE |||


\\\ MATCHA EARL GREY PANCAKES
Ingredients:
1 banana, cut in half
1 cup oats, ground into flour
3/4 cup earl grey tea (I brew mine the day before and put it in the fridge)
1/4 cup almond milk
1 heaping teaspoon matcha powder

Directions:
1. Mash half of the banana in a bowl
2. In a small blender, combine the tea, almond milk, and matcha powder; blend to make a uniform liquid
3. Add the liquid and oat flour into the bowl with the mashed banana and stir well
4. Cook your pancakes in a nonstick skillet over low-medium heat, about 3 minutes on each side. I used a 1/4 cup measure to pour the batter in.
5. Serve with the remaining half of the banana and your choice of toppings! I drizzled mine with tahini, maple syrup, coconut, and cacao nibs

\\\ BURRITO BOWL
This was 1 head chopped romaine lettuce topped with some diced red pepper, purple cabbage, corn, jasmine rice, homemade refried beans, and corn chips! To make the chips, I chopped up organic corn tortillas and sprinkled some salt + chipotle chili pepper on top of them, then baked them at 400 F for 8 or so minutes
